Basil Spinach Salad

  • 1 bunch spinach
  • 1/4 cup basil leaves, shredded
  • 2-2/3 Tbsp pine nuts, toasted
  • 1 bacon slice
  • 2-2/3 Tbsp oil
  • 1-1/3 Tbsp white wine vinegar
  • 1-1/3 Tbsp sour cream
  • 1/2 tsp sugar
  • 1 clove garlic, crushed
  • 1/4 cup grated Parmesan cheese, or Romano cheese

Combine first 3 ingredients in a bowl. Cook bacon in a small pan until crisp. Let cool. Combine next 5 ingredients in a jar with a tight-fitting lid. Mix well and drizzle over salad. Crumble bacon and add to salad with Parmesan or Romano cheese.
