Ingredients:

2-3 russet potatoes, thickly sliced

1-2 tbsp oil 

1 tbsp coarse salt 

1 tbsp minced garlic/2-3 cloves 

1 bag shredded cheddar cheese 

8 oz sour cream 

1 pkg Fully cooked bacon 

2-3 tbsp Finely chopped chives 

Directions:

Preheat oven to 425

Slice potatoes slightly larger than a quarter inch. 

Mix salt with minced garlic in a separate bowl. 

Toss thickly sliced potatoes in oil, lightly roll in salty-garlic mixture. Lay slices flat on a cooking sheet with parchment paper. 

Bake for 15 mins, then flip and bake an additional 15 mins or until potatoes are easily pierced with a fork. 

Immediately after removing from the oven sprinkle heavily with shredded cheese and bacon. Add a dollop of sour cream and sprinkle chopped chives on top.
